If Nima detects ANY gluten proteins in the sample, you will receive a "Gluten Found" message.
Nima is not a quantitative test but has been tuned to detect with a high level of accuracy at 20 ppm and above. The United States FDA requires that any product labeled "gluten-free" contain a maximum gluten content of 20 ppm. You can find more information about the FDA's food-labeling requirements and what 20ppm means by clicking here. In some food matrices, Nima will also detect lower levels of gluten.
Your results can vary based on food tested, size of sample, and product usage. Nima is a screen and not an absolute - testing one part of a dish may miss gluten elsewhere on a plate.
