If Nima detects any gluten proteins in the sample, you will receive a "Gluten Found" message.
Nima is not a quantitative test but has been tuned to detect with a high level of accuracy at 20 ppm and above. The United States FDA requires that any product labeled "gluten-free" contain a maximum gluten content of 20 ppm. You can find more information about the FDA's food-labeling requirements and what 20ppm means by clicking here.
Your results can vary based on food tested, size of sample, and product usage. Nima is a screen and not an absolute - testing one part of a dish may miss gluten elsewhere on a plate.
