Nima might find gluten in things that are labeled gluten free.
The FDA standard to label something gluten free is less than 20 ppm of gluten. If Nima detects gluten at any level, we will return a result of Gluten Found. While we’ve been tuned to be sensitive to 20 ppm and above, our internal data shows that we can sometimes pick up amounts less than 20 ppm. However, we can’t detect below 20 ppm reliably. That means, it’s possible to see Gluten Found for something that is still correct in its gluten free label at less than 20 ppm.
